Enzymatic Biotransformation of Sucrose to Myo-Inositol Via Non-Natural Pathways and Thereof

Description:

We constructed in vitro enzymatic pathways that can convert sucrose to myo-inositol and fructose. Myo-inositol is vitamin V8, which has been widely used in the pharmaceutical, drink, food, feed, and cosmetic industries. Without product separation, a mixture of inositol and fructose will be a perfect functional sweetener, which may be directly added into current energy or vitamin drinks.  We believe that such sweeteners may be made at unmatched low cost.
